Colleagues, let’s eat! Part 2

Today we make it easy and green at the lunch table. We become Popeye, the spinach devouring sailor, and start the new office week full of energy! The really easy-making dish provides us with important vitamins that support our health, especially in the transition period from summer to autumn.

Let’s go veggie and green

Everything revolves around spinach in today’s dish. Spinach has a high content of minerals, vitamins (β-Carotin, also called pro-vitamin A, vitamins of the B group, vitamin C) and protein. Thus all good things – on it goes to spinach-miso-sesame, our today’s Veggie midday meal.

For the dressing:

  • 40 g miso paste
  • 40 g rice vinegar
  • 20 g maple syrup
  • 10 g vegetable oil
  • 10 g grapeseed oil

Put miso paste, rice vinegar, and maple syrup in a bowl and mix with a whisk. Stir the vegetable and grape seed oil into the dressing.

What else?

  • 20 g white sesame
  • 400 g baby spinach

Wash the spinach and arrange in a bowl, drizzle with the dressing. Sprinkle with sesame seeds and serve.

The indicated quantities are sufficient for 2 colleagues at lunch.
