For the filling:

  • 2 courgettes
  • 2 tbsp butter or oil for frying
  • 1 tbsp butter
  • 2 tomatoes
  • 200 g grated cheese (e.g. grated mozzarella)
  • Salt
  • Pepper
  • 2 – 3 tbsp. clarified butter, butter, or oil for frying
Preparation

Dough:

  • Crumble the yeast into the lukewarm water. Add the sugar and let everything rise for about 10 minutes.
  • Pour the yeast water into the flour. Add the melted butter and salt and knead everything into a smooth dough for a few minutes. Knead the dough well for a few minutes.
  • Cover the yeast dough and leave it in a warm place to rise for 1 hour.
  • Then knead again briefly and cut the dough into 8 equal pieces. Shape each piece into a ball and then roll it out into a patty on a lightly floured surface.

Filling:

  • For the filling, cut the courgettes into thin slices and fry briefly in clarified butter, butter, or oil.
  • Cut the tomatoes into slices.
  • Cover each patty with a slice of tomato and a few slices of courgette and sprinkle with cheese. Salt, pepper, and fold together. Close well, pressing the dough together so that none of the fillings comes out.
  • Rub a pan with a little rapeseed oil and fry the patties one by one over medium heat until lightly browned on both sides.

And then something with cheese…

Have you ever heard of a foldable tea light raclette? Well, we love it! Admittedly, it takes a little time for the cheese to soak up, but breaks are there to be enjoyed and a hot mountain cheese on a fresh loaf of bread is simply 1000!
