The best recipes with watermelon: A homage to the most popular fruit of the summer

August 3rd is International Watermelon Day. Reason enough to pay a little attention to the round fruit and celebrate it properly. What would a summer be without watermelon? Whether as a snack between meals, like a fruity ingredient in salads or freshly pressed in a smoothie – hardly any other fruit delights us in summer as much as watermelon. That’s why here are our 5 best recipes and tips for watermelon (even if the list would be endless…)

1. Watermelon with salt

Sounds funny, but it is true: if you put some salt on the watermelon, it tastes even more intense and sweet. Some of you may know it from baking – if you add some salt to something sweet, its own taste becomes more intense, as the salt acts as a natural flavour enhancer.

2. the classic: watermelon with feta

Ingredients for 4 small portions:

  • 1 kg watermelon
  • 200 g feta
  • 1 lime
  • 2-3 sprigs of thyme or mint
  • 3 tablespoons of olive oil
  • 1 pinch of salt
  • Optional: red onion, honey and walnut

Preparation: Cut the watermelon into bite-sized pieces, marinate with the juice of the lime, salt and olive oil and then add the feta and herbs – et voilà!

Small tip: with a little red onion, honey and walnuts the salad tastes even more intense

3. poke bowl with watermelon (vegan)

Watermelon is a super vegan substitute for tuna and is the food trend of the year: the Poke Bowl.

Ingredients for 4 persons:

  • 500 g watermelon
  • 3 tablespoons peanut oil
  • 3 tablespoons apple or white wine vinegar
  • 2 avocado
  • 200 g rice
  • 1 cucumber
  • 150 g Edamame
  • Salt
  • Optional: some silk tofu, carrots

Preparation: Cut the watermelon into bite-sized pieces and marinate with a pinch of salt and the peanut oil. Then bake in the oven for 20-30 minutes and mix with vinegar. In the meantime, cook the rice according to the instructions on the packet and blanch the edamame for 10 minutes. Cut the avocados into strips and the cucumber into small cubes.

Arrange everything in a bowl and season as required.

A little tip: to give the bowl some more colour and texture, you can cut carrots with a spiral slicer and add them to the bowl together with some silk tofu.

4. watermelon cucumber cocktail (vegan)

For the perfect refreshment on a hot summer day, we recommend a cold and super simple cocktail.

Ingredients for 4 cocktails:

  • 150 ml fresh watermelon juice
  • 4 cucumber slices
  • 150 ml gin
  • 100 ml fresh lime juice
  • 60 ml of sugar syrup
  • pinch of salt

Preparation: Put all ingredients into 4 long drink glasses and garnish with a slice of cucumber

5. watermelon carpaccio with tuna

You want to impress at a dinner with little effort? Then we recommend watermelon carpaccio with tuna. Super simple, but with great effect.

Ingredients for 4 persons:

  • 400 g raw tuna (in sushi quality)
  • 400 g watermelon
  • 4 tablespoons of olive oil
  • 100 g fennel
  • Black salt
  • Optional: 4 squirts of lemon

Preparation: Cut watermelon and tuna into thin slices and arrange on a plate. Slice the fennel and garnish over the tuna and watermelon. Finally, marinate the carpaccio with the olive oil and black salt. If you like it fresh, you can add a small dash of lemon on top.
