In Pizza we trust

They are available in many variations, deep-frozen or fresh from the oven. Or also: homemade. We are talking about pizza! A dish that probably everyone likes. Perhaps also because it is so varied. Johannes Seper, executive chef at the Falkensteiner Balance Resort Stegersbach, will tell you his personal pizza recipe and has enlisted help from his family to prepare it. Baking pizza as a family adventure, so to speak! And the good thing about it: You probably already have the ingredients for the dough and topping at home and can start right away!

Ingredient list:

  • 500g pizza flour
  • 4g dry yeast
  • 400g water
  • 8g salt
  • 1 tablespoon olive oil
  • Tomato sauce
  • grated mozzarella
  • Vegetables as you like

How to

Mix the pizza flour with dry yeast and lukewarm water. Then add salt and olive oil and mix further. Cover the pizza dough and leave to rise in a warm place for 15 minutes. Then take it out of the bowl and knead it carefully – 3 times! After the last kneading cycle, cover the dough and put it in the fridge for 24 hours.

The next day, place the pizza dough from the bowl on a floured work surface, knead it carefully once again and divide it into four parts, preferably of the same size. But we do not make a “normal” pizza but a pizza face. For this, form a face from the dough and cover it with the ingredients of your choice. For example, we have used grilled courgettes, peppers, cherry tomatoes, cauliflower and spinach. But of course, we also used tomato sauce and mozzarella, typical for the pizza. Let your imagination run wild because every taste counts 😉

Then put the finished pizza face on an oiled baking tray and bake in the preheated oven at 230 degrees for about 10 to 15 minutes.

They see me rollin’

Those who do not dare to get a pizza face can of course also try another kind of pizza – the calzone.

A calzone is an Italian, oven-baked and folded pizza that has its origin in 18th century Naples. A typical calzone is made from salted bread dough, baked in an oven and filled with salami, ham or vegetables, mozzarella, ricotta and parmesan or pecorino cheese and an egg. We thought of a slightly different filling, with ingredients that were already in our pantry.

For the filling:

  • Bacon
  • Onion
  • Peppers
  • Mushrooms
  • Spinach

Cut all ingredients into strips and fry them in a pan, then let them cool down. Pull out the already finished pizza base about as big as a DIN A4 sheet. Spread with tomato sauce and spread the filling lengthwise in the middle of the dough, sprinkle with mozzarella and fold into a bag. Then place on an oiled baking tray and bake in the oven at 230 degrees for about 15 – 25 minutes.

Two tips at the end:

  • You can also pull the pizza base out right on the tray and then fold it up.
  • After baking, spread a little tomato sauce on it. This enhances the taste! 😉
