You’ve probably already heard of alkaline fasting. Ms. Marchetti, General Manager at the Falkensteiner Hotel Schladming, revealed her experiences on this topic in the third part of the blog series.

In the course of her ongoing training as a fasting companion, she now offered, organized, and led a fasting week for her employees in Schladming at the beginning of November.
Apart from a worked out chamfering program over 5 days (plus relief and structure days), which offered also important points such as movement, rest & relaxation, and SPA applications, the Teilnehmer_innen were allowed to stay overnight also in the hotel. Participation in the program was also possible on a part-time basis.

Bernd Maier, chef at the Falkensteiner Hotel Schladming – you already know him from the “Vegan Barbecue with a Breathtaking View” – was not only a participant in the fasting week, but he also agreed to personally prepare the meals for the basic fasting week. He shared his experiences and thoughts with us in an interview:

  • What experiences have you already made with the topic of “fasting” and do you already know alkaline fasting?

When it comes to “fasting” I am preloaded 🙂 Health is a big topic for me: My goal is to be fit and active for and with my family as long as possible.
Of course, in my job, everything revolves around nutrition and its preparation. Privately, I also live the topic very strongly and have thus already gained a lot of expertise and experience. I have already tried many “diets and fasting forms”, e.g. interval fasting, ketogenic & vegan diet, and many more. Alkaline fasting, however, was a relatively new topic for me, my interest was immediately aroused.

  • Besides participating in the program, you also prepared the meals for the participants – what did you pay special attention to when cooking?

The focus this week was on alkaline organic food. For me, it was important that the fasting dishes also reminded me of “normal food”, that the enjoyment was not lost and that the guests were happy all around. As a chef, I naturally always pay attention to taste and enjoyment, these components should never be missing. And the eye also eats! A beautifully arranged meal in a cozy ambiance directs the focus entirely on the meal and the pleasure itself.

  • What challenged you? What did you particularly enjoy?

From the participant’s point of view, it was challenging to “get everything under one hat.” Getting involved in fasting and taking time for myself was a bit difficult for me, along with working and cooking.
Next chance I get, I’ll definitely try to schedule enough time to experience the whole program. Exercise and time for oneself, along with meals, are essential components that should not be omitted or underestimated. I highly recommend this to everyone!
From a cooking perspective, the limited ingredient selection (only alkaline foods) was a bit of a challenge. However, I am very grateful for the experience and opportunity, as challenges like this allow you to find new ways and means as a cook, to try things out, and to learn a lot of new things.

  • What did you personally learn from this week and what can you integrate into your everyday life?

In any case, I want to take alkaline fasting into my everyday life. In between, I also plan times for interval fasting. I have found my rhythm for myself and know what is good for me and what I need.
It is also important to me to always go through everyday life with an open mind and curiosity, and to often just try things out again!
This week has confirmed to me again that fasting moves a lot in me, physically as well as mentally. The positive effects are like a small “souvenir” that you take with you and that also remains.

For the “kitchen everyday life,” the basic dishes were, in any case, a horizon expansion – many self-evident things (such as salt) fall away and you have to think “out of the box” and use your creativity. This also brings back countless ideas for new dishes & creations!

  • Do you have another recommendation?

Just try it out! Alkaline fasting in particular is easy to implement and the benefits are very high. If the cell phone is broken, everyone knows what to do. However, if the body no longer likes, we are often at a loss – treat yourself and your body to regular breaks, lots of exercises, and good “fuel”! 😉

And finally, here’s a recipe to get you in the mood for winter:

“BASIC PEAR AND PLUM COMPOTE”:

For 4 people

  • 500g pears
  • 500g plums
  • 400ml water
  • 2 anise stars
  • 1 cinnamon stick
  • 2 cardamom pods

Here’s how:

  1. Peel and core the pears and cut them into 1/4.
  2. Remove the seeds from the plums and cut them into quarters.
  3. Boil everything together cover and let cool at room temperature.
  4. It’s best to let it steep overnight in the refrigerator, then heat it up the next morning and enjoy.

PS: You can also boil down other alkaline fruit, such as apples or peaches, or experiment with other spices. Vanilla or cloves are excellent for this.
